Homemade Pea Jelly
Pea starch cooked with salted water until it bubbles and thickens, then set into a firm jelly, a cool, silky, neutral canvas for seasonings.
Instructions
- 1

Prepare 100 grams of pea starch.
- 2

Add 900 grams of water to the pot, add a little salt, pour in the pea starch, and stir constantly over medium heat (you can also dissolve the pea starch in water beforehand and then pour it into the water).
- 3

Stir until large bubbles appear, then reduce to low heat and stir for another three minutes (the exact time depends on personal preference for the firmness of the jelly).
- 4

Pour into a container and let it sit at room temperature until it solidifies (about 4 hours).
- 5

After solidifying, turn it upside down on the cutting board.
- 6

Shave into shreds with a scraper (or cut into strips or chunks).
- 7

Place into a plate, add chopped green onions, minced garlic, chili flakes, white sesame seeds, and crushed nuts (peanuts, walnuts, almonds).
- 8

Pour the hot oil, which has been infused with Sichuan peppercorns, over the ingredients to release the aroma.
- 9

Add an appropriate amount of Wei Ji Xian and fragrant vinegar (or aged vinegar) according to personal taste, then drizzle with flaxseed oil and sesame oil (blended oil).
- 10

Stir thoroughly until well mixed, sprinkle with cilantro, wow, it smells so good 😊~
