Homemade pickled long beans
A spiced brine of star anise, cinnamon leaf, and dried chili is boiled, sweetened, and cooled, then poured over sun-dried beans to ferment into a sour, rice-friendly classic.
Instructions
- 1

The yardlong beans my aunt grew were first washed thoroughly and then dried under the sun.
- 2

Prepare star anise, bay leaves, cinnamon, Sichuan peppercorns, and dried chili peppers.
- 3

An appropriate amount of garlic and ginger.
- 4

Boil water in a pot, add the cleaned star anise and dried chili peppers.
- 5

Add salt after cooking for 15 minutes.
- 6

Pour in the sugar again.
- 7

Stir until melted, then let it cool naturally after turning off the heat.
- 8

All the ingredients are ready. Take a clean jar without oil or water, and it's best to rinse the inside of the jar with high-proof rice wine.
- 9

Roll the green beans into rings and stuff them into a jar.
- 10

Fill it all up.
- 11

Place garlic and ginger on the surface.
- 12

Pour in the sauce.
- 13

Add the chili peppers in as well.
- 14

Finally, pour in the high-proof rice wine to seal.
- 15

Cover the surface with plastic wrap.
- 16

Tighten the lid, place in a ventilated and cool area, and marinate for 7 to 10 days.
- 17

This is the result of pickling for seven or eight days. In the summer, fermentation happens quickly due to the heat, and the sour long beans are ready.
- 18

It tastes sour and is very fragrant.
- 19

Finished product. This is the entire process of making pickled long beans by oneself.
