Homemade Pickled Soybeans

Homemade Pickled Soybeans

Chopped long beans mixed with ginger, garlic, and chili are salted like a stir-fry, then sealed away to sour naturally before hitting the pan.

Instructions

  1. 1
    Step image

Wash the kidney beans, chop them finely, then also chop some ginger into thin strips, garlic into minced pieces, and red chili.

  2. 2
    Step image

Mix the chopped broad beans with the seasonings using salt (the amount is about the same as when you usually cook).

  3. 3
    Step image

You can put it in a food storage container or any other sealed glass jar and leave it outside for about two days (around two days in summer, usually a much longer time in winter). Once the color changes, put it in the refrigerator, and when eating, just take it out and stir-fry.
