Homemade Pork Jerky
Homemade Chinese pork jerky made from seasoned lean ground pork pressed paper-thin between parchment sheets and baked until chewy, lightly sweet and deeply savory with caramelized edges.
Instructions
- 1
About 500g of lean pork.
- 2
Cut into small pieces and put into a meat grinder with slices of ginger to grind.
- 3
Add an appropriate amount of seasoning, mix in one spoon of starch and two spoons of water until well combined, and finally add two tablespoons of cooking oil. This way, the texture won't be too tough.
- 4
Place the minced meat between two sheets of parchment paper and press it into thin slices with a rolling pin.
- 5
After shaping with a spatula, cover with parchment paper and place in the middle of the oven. Bake at 200 degrees for about 8 minutes. It depends on the size of your oven, so bake slowly; my oven isn't particularly hot.
- 6
Take it out when it's roughly cooked, remove the top layer of parchment paper, and brush the surface with honey water, made by mixing honey with an appropriate amount of clear water.
- 7
Continue baking until the surface changes color, then take it out to flip and brush with honey, and bake again. If you like a sweeter taste, you can brush with honey water several more times, flipping frequently while baking. Do not leave the oven at this step; observe slowly.
- 8
Bake until it reaches the hardness you are satisfied with. Mine was just a little bit away from being overdone, fortunately I took it out of the oven in time.
- 9
Cut into small pieces and put them in a box, store in the fridge for a week and then eat the meat. Can you smell the fragrance? Hurry up and start, the ones at the supermarket are very expensive.
