Homemade Salad Dressing
An egg-yolk mayonnaise whipped by hand, with oil streamed in slowly and sharpened at the end with vinegar or lemon, producing a thick, silky, sweeter dressing than store versions.
Instructions
- 1

Prepare all the ingredients.
- 2

Beat the egg yolks in a bowl, add sugar, and whisk until fluffy.
- 3

Beat until the volume of the egg yolks expands, the color lightens, and it becomes thick.
- 4

Add a small amount of oil and beat with a whisk until the oil and egg yolks are fully combined.
- 5

Continue adding oil in small amounts, slowly, and the sauce becomes thicker and thicker.
- 6

At this time, the sauce is too thick and difficult to stir.
- 7

Add 1 teaspoon of white vinegar (lemon juice).
- 8

Continue whisking, and the sauce in the bowl becomes thinner, gradually changing color from yellow to white.
- 9

Repeat the process of adding a small amount of oil and stirring multiple times until all the oil is added. The white vinegar (or lemon juice) does not have to be added completely; add according to personal preference.
- 10

Once mixing is complete, the salad dressing is ready. Put the prepared salad dressing into sterilized bottles for storage.
- 11
