Homemade Salted Duck Eggs
Thoroughly dried duck eggs are submerged in a saturated brine spiked with strong liquor, curing for weeks until the yolks turn dense, sandy and golden with oil.
Instructions
- 1
Wash the surface of fresh duck eggs clean and let them air dry. Make sure they are completely dry.
- 2
Wash the container for the salted duck eggs and drain the water. The bottle must be thoroughly cleaned and completely dried.
- 3
Take a clean, water-free, oil-free basin, pour in 1500ML of cooled boiled water, add 300 grams of salt and 150ML of high-proof white liquor, and stir until the salt is completely dissolved.
- 4
Put the dried duck eggs into a container.
- 5
Pour in the prepared brine, making sure each duck egg is submerged in the brine.
- 6
Seal with plastic wrap, cover with a lid, and marinate sealed for about 45 days.
- 7
Take the marinated duck eggs, put them in a pot with cold water, and simmer on low heat for about 20 minutes after it comes to a boil.
