Homemade Salted Eggs
Duck eggs are rolled in strong liquor, coated in microwave-toasted spiced salt, and sealed away to cure into rich, oily, golden-yolked salted eggs at home.
Instructions
- 1

Rinse the purchased duck eggs clean on the surface.
- 2

Add star anise, cinnamon, bay leaves, and a large amount of salt to the pan;
- 3

Put it in the microwave on high for three minutes, take it out halfway to turn it over, then remove the spices and set them aside.
- 4

Pour the high-proof liquor into a small bowl;
- 5

Wash the duck eggs clean and drain the water or wipe them dry with kitchen paper towels;
- 6

Roll the duck eggs in white liquor;
- 7

Then roll the duck eggs, which have been coated with liquor, in the treated salt, so that the surface of the eggs is evenly coated with a layer of salt.
- 8

Stack them in the pickle jar;
- 9

Cover the bowl with a lid, pour water around the edges, and marinate for more than twenty days;
- 10

The pickled salted eggs can be eaten after being cooked, and they go well with side dishes or congee.
