Homemade Small Fried Dough Sticks
Mini youtiao with an airy, hollow interior, made from an overnight cold-proofed dough leavened with baking powder, stretched, doubled, and fried until puffed and deeply golden.
Instructions
- 1

First, mix the flour with baking powder and leavening agent evenly, then mix the salt and water evenly and gradually pour it into the flour, stirring into a flaky texture, and then knead into a relatively soft dough.
- 2

Place it on a non-stick baking tray lightly greased with a little cooking oil.
- 3

Place the laminated item in the refrigerator's cold storage section (do not put it in the freezer) overnight.
- 4

The next morning, take it out from the refrigerator's cold storage to return to room temperature.
- 5

No need to knead the dough, roll it into a rectangular sheet, and trim off the irregular edges.
- 6

Cut into even strips.
- 7

Apply some water vertically on one strip in the middle of the dough sheet, then stick the other strip to it, and press the middle vertically with chopsticks.
- 8

It felt a bit long while frying, so I cut it in the middle.
- 9

Heat the oil in the pan, then put in the dough sticks to fry (because they were cut in the middle due to their length, the other end looks a bit messy).
- 10

Flip and fry until golden and puffed.
- 11

Fried three large dishes, while the family members who were working or attending classes were eating as they cooked.
- 12

A thin layer of powdered sugar was sprinkled on the fried dough sticks, making the sweet and salty taste richer.
- 13

The fried dough sticks are golden in color, with a fluffy texture, even pores, and an enticing crispy aroma. Freshly fried and eaten with soy milk or tofu pudding for breakfast is the choice of many people.
