Homemade sour and spicy white radish that is crispy and appetizing
White radish and carrot slices get sugared to draw out moisture, then chilled with chili, ginger, and vinegar into a punchy, appetite-awakening side that stays pleasantly crunchy.
Instructions
- 1

Prepare the ingredients.
- 2

Clean all the ingredients thoroughly. Peel the white radish (it has no spicy taste), cut it into quarters, and then slice it into thin pieces—not too thin. Slice the carrot and ginger, and cut the small chili peppers into short sections.
- 3

Put the white radish and carrot into a larger container, add 30 grams of sugar and mix well, then marinate for about 1 hour, stirring 2 more times during this period. The radishes are ready when they release water and become soft.
- 4

While the radishes are marinating, prepare a sauce: mix 70 grams of sugar, 7 tablespoons of light soy sauce, 7 tablespoons of rice vinegar, and 2 grams of salt together until well combined.
- 5

Drain the water from the pickled radish.
- 6

Pour the seasoning sauce into the radish, and add slices of ginger and small chili peppers.
- 7

Put on disposable gloves and mix evenly.
- 8

Place into a sealed jar.
- 9

It can be eaten when it’s heavenly queen.
- 10

Sour, spicy, crispy, and appetizing, especially suitable to eat with porridge as a condiment; affordable and without additives.
