Homemade steamed rice cake
A fluffy Chinese steamed sponge cake made from a rested rice-flour batter, decorated with goji berries and raisins and steamed until it springs back to the touch.
Instructions
- 1

First, mix all the flour ingredients evenly.
- 2

Pour in an appropriate amount of warm water, stir evenly, and let it sit for 10 minutes (cover with a lid). After 10 minutes, stir again.
- 3

Prepare goji berries and raisins by washing them clean, and remove the water before using.
- 4

Line the bottom and sides with parchment paper, pour in the batter and let it rest and rise a second time, then place goji berries and raisins for decoration. Let it rise until it is about 80% full (the mold is 8 inches).
- 5

Bring the water in the pot to a boil, place the molds in the pot and steam for 20 minutes (open the lid 3 minutes after turning off the heat).
- 6

I measured the steamed cake and it is 10 cm thick, it seems that using a slightly larger mold would be better.
- 7

The cut steamed rice cake has evenly distributed honeycomb holes, is pure white, fluffy, soft yet elastic, and has a light and tender texture.
