Homemade Stir-fried Rice Noodles
Busy wok-tossed rice noodles with egg, mushrooms, cabbage, ham and colorful vegetables; softened noodles soak up garlicky, mildly spicy sauce for a springy, satisfying meal.
Instructions
- 1
Soak the rice noodles.
- 2
Shred the mushrooms and Chinese cabbage and set aside.
- 3
Carrots, onions, green peppers, and ham are cut into thin strips and set aside.
- 4
Shred the potatoes and soak them in cold water to wash off the starch; doing this makes the potato shreds crisper.
- 5
Finely chop the chili peppers and garlic.
- 6
Beat the eggs.
- 7
Heat oil in a pan and scramble the eggs until broken, then stir-fry the cabbage and mushrooms until they release water, and set aside.
- 8
In another pan, heat oil and sauté the small chili peppers and garlic until fragrant. Add the remaining ingredients and stir-fry evenly. Then add dry pot sauce, Sichuan pepper powder, and chili powder, stir-frying evenly. Pour in dark soy sauce for coloring, oyster sauce for enhancing the flavor, and light soy sauce to adjust the saltiness. After that, add the soaked rice noodles, and stir evenly using a spatula and chopsticks together.
- 9
Sautéing off the excess moisture a bit will improve the texture.
- 10
Delicious homemade fried rice noodles are ready! It's really so tasty 😋
