Homemade Tofu Soup
A rustic country-style tofu soup, the drained tofu briefly fried with scallion, ginger, and star anise, then simmered for a pure, savory bean flavor.
Instructions
- 1

After buying the tofu, first refrigerate it for a while to let the water drain from the tofu.
- 2

Cut the tofu into pieces.
- 3

Scallions, ginger, and spices.
- 4

Turn the heat to high, add scallions, ginger, and whole spices to the cold oil in the hot pan and stir-fry until fragrant.
- 5

Add the tofu and lightly stir-fry.
- 6

Add water (enough to cover half of the tofu).
- 7

After boiling, reduce to medium-low heat and cook for about 10 minutes, turning the tofu over once. Add salt (you can add a bit more, but not too salty), stir a few more times, and then it's ready to serve.
