Honey bitter melon
Carefully scraped bitter melon slices, briefly blanched and shocked in ice water, are coated in honey, transforming a notoriously bitter vegetable into a crisp, gently sweet treat.
Instructions
- 1

Half a handsome bitter melon.
- 2

Be sure to scrape off the white membrane of the bitter melon seeds. This is the key element for not being bitter.
- 3

Sprinkle a little salt and mix evenly, marinate for 3-5 minutes.
- 4

After boiling water, add the bitter melon and blanch for 1-2 minutes. Do not cook too long, as it can become soft and lose its crisp texture.
- 5

Pass through ice water.
- 6

Add honey and mix well.
