Hot and Sour Dried Radish
Radish strips swim with Sichuan peppercorns, pickled chilies, and glutinous rice vinegar, absorbing a mouth-tingling sour-hot character over several hours.
Instructions
- 1

Prepare white sugar, Sichuan peppercorns, and shredded ginger.
- 2

Prepare glutinous rice white vinegar.
- 3

Prepare pickled chili peppers.
- 4

Cut the white radish and carrot into strips and set aside. 5. Add salt to let them absorb the flavor. 6. After a while, add a small amount of Sichuan peppercorns, shredded ginger, a little pickled chili, a little white vinegar, and a little sugar. Mix well and place in a bowl to marinate for a few hours to absorb the flavor. 7. Pour cooled boiled water to cover the radish strips and place them in a pickling jar. (Note: ⚠️ For more sour taste, add more white vinegar; for sweeter taste, add more sugar.) The sweet, crispy, and sour side dish is ready to go with rice. It's super delicious.
