Hunan pickles
A traditional water-sealed crock hosts thoroughly air-dried vegetables in a brine sharpened with liquor, the time-honored Hunan approach to keeping a steady supply of sour crunch.
Instructions
- 1

Clean the kimchi jar and let it dry in the sun for later use.
- 2

Prepare the ingredients: salt, white sugar, high-proof white liquor (we ran out of home liquor, so it wasn’t photographed)!
- 3

Wash all the vegetables to be soaked, put them in a vegetable basket to dry the water. (The small chili peppers and young ginger in the finished product picture were soaked last time, hehe)
- 4

Cover it with the lid, and pour cold boiled water onto the edge of the jar! Remember not to let the water on the jar edge dry out; you need to add water every two or three days. By the way, use a clean towel to wipe the jar edge and lid before adding water!
