Hunan-Style Crispy Rice from a Farmhouse
Hunan farmhouse crispy rice: flattened cooked rice brushed with oil and air-fried into a crunchy sheet, then showered with crispy fried minced pork, garlic, and tangy pickled beans.
Instructions
- 1

Take a bowl of leftover rice.
- 2

Place the rice between two sheets of oil-absorbing paper. Roll it flat with a rolling pin. Note: Do not make it too thin. Slightly thicker rice crust will be crispier and have better texture.
- 3

After rolling it out, brush corn oil on the rice.
- 4

Then put it in the air fryer. 180 degrees, 20-25 minutes.
- 5

Add oil to the pot and stir-fry the fatty and lean minced meat. Fry out all the oil from the minced meat. It becomes crispy.
- 6

Add the minced garlic and pickled long beans. Stir-fry together, then pour in light soy sauce, dark soy sauce, and white pepper powder, and continue stir-frying.
- 7

Add starch to cold water. Stir into a paste.
- 8

Put the starch paste into the pot. Stir it together. Then add two bowls of water. Make sure the contents in the pot are a sticky, gooey soup, not solid, but of course, not too thin either.
- 9

The crispy rice is fried. Pour the simmered soup over it.
- 10

Then crush the crispy rice and soak it in the soup, and it’s ready to eat.
