Jade Radish
Thin green radish slices are brined until pliable and mellow, then steeped in a sweet-tart vinegar bath with garlic. The longer they sit, the prettier and punchier they get.
Instructions
- 1

Green radish, salt, white vinegar, white sugar, 1 or 2 cloves of garlic (garlic can be omitted)
- 2

First, chop the garlic into small pieces
- 3

Soak in white vinegar and sugar; the longer it soaks, the better the taste.
- 4

Peel the radish and slice it thinly
- 5

Add salt and marinate for more than half an hour.
- 6
Pickle the radish slices until they are soft enough to bend without breaking and have no spiciness.

Pickle the radish slices until they are soft enough to bend without breaking and have no spiciness.
- 8

Rinse off the saltiness until there is no salty taste.
- 9

The final rinse can be done with cold boiled water or distilled water, then drain off the water.
- 10

Pour in the flavored mixture of white vinegar, sugar, and garlic sauce
- 11

Mix well; the longer it marinates, the more flavorful it becomes.
- 12

Tangy, sweet, and crisp jade radish

I also like to add some chili sauce
