Japan's traditional sweet bread 'Amanashi' debuts
A homemade recipe for Japan's traditional sweet bread 'Amanashi' debuts, combining low-gluten flour, baking powder and baking soda; baked until golden and fragrant. Easy to follow with simple step-by-step instructions.
Instructions
- 1

Ingredients: 150g low-gluten flour, 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, 22g butter (room temperature), 90g white sugar, 30g miso, 60ml milk, half an egg.
- 2

Put the butter and white sugar into a large bowl and mix until grainy.
- 3

Add the miso and beaten eggs, and stir until smooth.
- 4

Add the milk and stir until smooth.
- 5

After mixing the flour, baking powder, and baking soda, sift them into the liquid and stir until there is no dry flour.
- 6

Cover with plastic wrap and let it sit at room temperature for 30 minutes.
- 7

Put the batter into a piping bag, cut an opening about 1 cm in size, and pipe the batter onto a baking tray in circles about 5 cm in diameter. If the shape isn't round, use a finger dipped in water to adjust it. Then, use a sharp small knife, dip it in a little oil or water, and make a cross cut on the surface of the dough. The cut should have some depth.
- 8

Place in a preheated oven at 200-250°C, middle rack, bake with both top and bottom heat for 8-10 minutes.
- 9

Golden on the surface, just out of the oven.
