Kelp and Pork Rib Soup
A nourishing soup of blanched pork ribs simmered with rehydrated kelp strips or knots, yielding a briny, mineral-rich broth with tender meat and slippery sea vegetables.
Instructions
- 1

Before cooking, kelp needs to be soaked in clean water for 3-4 hours until it swells, then it can be cut into rectangles or tied into knots for later use.
- 2

Pour an appropriate amount of cold water into the pot, add the cleaned ribs, and after adding cooking wine, bring to a boil to blanch.
- 3

After about a few minutes, skim off the scum, and rinse the blanched ribs with clean water.
- 4

First, put the blanched pork ribs and sliced ginger into the pot, add an appropriate amount of water, bring it to a boil over high heat, then reduce to medium heat and cook for about 30 minutes.
- 5

Add the kelp after a few minutes, turn to high heat, and boil for 20 minutes. Before removing from the heat, add an appropriate amount of salt to taste and sprinkle with chopped green onions.
