Kidney Bean Leaf Soup Worth Trying (Yardlong Bean Leaves)

Kidney Bean Leaf Soup Worth Trying (Yardlong Bean Leaves)

A rustic Cantonese farmhouse soup of tender yardlong bean leaves, stemmed and chopped, briefly boiled in salted, lightly oiled water or rib-steaming broth until just wilted and grassy-sweet.

Instructions

    Chop.

Add water, oil, and salt to the pot. I added the soup from steamed spare ribs.

After the water boils, pour in the bean leaves.

  5. 5

Turn over the bean leaves and cook for two to three minutes.

    That's enough.

The cowpea leaves grow like this, and the stem in the middle is tough and needs to be removed.
