Korean-style clam soup noodles

Korean-style clam soup noodles

A light Korean-inspired noodle soup featuring brined clams, shimeji mushrooms, and spinach in a quick savory broth, clean-tasting and ready in minutes.

Instructions

Prepare the ingredients! Let the clams spit out sand in lightly salted water! Remove the stems from the crab-flavored mushrooms! Trim the roots from the spinach and cut the long ones in half! Peel the green onions, ginger, and garlic! (A little secret! I found some crab-flavored mushrooms and asparagus in the fridge that would go bad if not eaten, so I added them! These aren't in the TV drama~).

Wash the spinach and crab-flavored mushrooms and place them on a plate for later use! Wash the clams several times until they're clean! Wash the zucchini and cut it into slightly thick sticks~ Slice the scallions! Slice the garlic! Cut the green onions into sections~ Also prepare some flour (plain flour is fine!) to add color to the soup! (I originally wanted to add a bit of milk, but I didn't buy any baby bok choy, so I used spinach instead! I checked and found that milk and spinach don't go well together, so I changed to using flour!).

Boil the clams until they open! Take them out and set them aside for later! Then strain out a bowl of the original clam soup and set it aside!

  4. 4

Add lard to the pot and melt it over low heat!

  5. 5

Sauté the scallions, ginger, and garlic until fragrant!

  6. 6

Stir-fry the zucchini a few times, then add the asparagus! Continue stir-frying for a bit!

  7. 7
    Step image

Add the original clam broth! (If there’s not enough soup, add some hot water! It's best to have a bit more soup when cooking the noodles! Later, you'll add some flour, and the soup will thicken!) Once the water boils, add the crab-flavored mushrooms! If you don't have any, you can skip this~

    Step image

Once the water boils, add the flour! Don't add too much! A little at a time! The most important thing! Sift the flour… otherwise it will become a lumpy soup… I just forgot to sift it… You can also mix the flour with water to make a flour water mixture and add it little by little! (Why didn't I think of that when I was doing it?!)

  9. 9
    Step image

When the water boils, add salt! Then let go of the handmade noodles~ Use chopsticks to separate the noodles~ Cover with the pot lid and cook for a while!

Once it boils again, add clams! Then add an appropriate amount of cooking wine! Sugar! Chicken bouillon!

  11. 11

Then add the spinach! Cook until the spinach is soft! Once it's cooked, add some black pepper!

Finally, sprinkle the chopped green onions inside! Turn off the heat! La la la! The fragrant clam soup noodles are ready!

Serve it with pickled garlic! It's really delicious! Although it's not authentic Korean style! (Alright... I searched for a long time! Baidu for a long time! There’s no authentic Korean recipe! I could only guess on my own!) But the taste is really good! Especially fresh and savory! Super delicious!

Here's another treat for you to enjoy~ (I'm starting to eat! You just watch! 😏)
