Laba vegetables
Prepared for the Laba festival, carrot ribbons, garlic and scallion are kept oil-free and meticulously dried, then hand-rubbed with salt to ferment into festive relish.
Instructions
- 1

, raw materials. After cleaning various raw materials, they must be thoroughly dried. Prepare the boxes for making preserved vegetables, which should also be oil-free, and rinse with boiling water before drying.
- 2

, grate the carrot, but do not use that type of grater that turns it soft; the grated carrot will not be crispy and will have a poor texture.
- 3

, slice the garlic and cut the green onions into thin strips.
- 4

Peel the carrots and put them into a sealed container. Wear disposable gloves and mix them evenly with salt. Knead carefully and patiently. Then add sugar and knead again, and finally add vinegar and knead until evenly mixed. Salt: sugar: vinegar = 1:1.5:2. Start by adding salt according to the usual amount used in cooking. Then add sugar and vinegar, adjusting to a suitable sweet and sour taste. Taste as you adjust. Be careful not to make it too salty; make sure the salt is properly measured first.
- 5

, add garlic and green onions, and knead them finely once.
- 6

, cover the freshness box, and it can be eaten overnight. When eating, add some sesame oil and cilantro; it is especially delicious! If stored for a long time, the garlic will turn green!
