Lablab Bean and Chicken Feet Soup
A collagen-rich Cantonese soup simmering parboiled chicken feet and lean pork with lablab beans, black-eyed peas, peanuts, and honey dates for a naturally sweet, gelatinous broth.
Instructions
- 1

Prepare lentils, black-eyed peas, peanuts, and dates. Wash them clean, and just give the dates a quick rinse.
- 2

Chop off the chicken feet nails.
- 3

Before making the soup, you should first blanch the chicken feet and lean meat. After the water in the pot boils, put the chicken feet and pork in.
- 4

You can see a layer of foam floating on the water. Pour out the water, then rinse it with clean water. Only with ingredients prepared this way will the soup you make be clear, sweet, and tasty.
- 5

First, put in the chicken feet and lean pork, and pour in about 10 bowls of water.
- 6

Then add the peanuts, black-eyed peas, lentils, jujubes, and slices of ginger.
- 7

Cover the pot, bring the water to a boil over high heat, then reduce to low heat and continue to simmer for an hour and a half. Finally, add salt to taste.
