Lamb Meatball and Winter Melon Soup
A comforting winter soup of hand-formed lamb meatballs, beaten until springy with ginger and scallion, poached gently alongside cubes of winter melon for a light, warming and peppery broth.
Instructions
- 1

Peel the winter melon, remove the seeds, wash it, and cut it into small pieces.
- 2

Add a little soy sauce, pepper, chicken essence, water, and salt to the minced lamb, stir in one direction until it becomes elastic, then add the minced green onion and ginger, a few drops of sesame oil, and mix evenly.
- 3

Place a pot on the stove, add an appropriate amount of water, and bring it to a boil. Once the water is boiling, add the winter melon. After cooking for a few minutes, reduce to low heat and start adding the meatballs. I made the meatballs using a small spoon.

After the meatballs are cooked, turn off the heat, add a few drops of sesame oil, sprinkle with cilantro, and they are ready to serve.

Finished product.
