Lard bread
A homemade recipe for Lard bread, combining flour, fat meat and red bean paste filling; baked until golden and fragrant. Great for beginners and experienced home cooks alike.
Instructions
- 1
Render the fatty meat into oil, and let it cool until half-cold. (About five minutes or so)
- 2
Pour 100g of flour and 20g of granulated sugar into the oil. The oil should not be too hot; if it is too hot, the granulated sugar will melt. This way, the baked bread will still have granules of white sugar inside, giving it a crunchy texture that is really great to chew.
- 3
Mix the flour thoroughly. There was a little bit less oil, so I added some corn oil. After mixing evenly, the sugary oil pastry is ready. Set it aside for later use.
- 4
Add the remaining flour, yeast, and warm water
- 5
Knead into a dough.
- 6
Add some corn oil.
- 7
Knead it like washing clothes until the dough becomes elastic.
- 8
Roll into thin slices.
- 9
Fold the quilt.
- 10
Roll it thinner.
- 11
Fold the quilt again.
- 12
After repeating it a few times, roll it out thin again.
- 13
Spread the sugary oil pastry on the dough.
- 14
Also add the leftover red bean paste from making mooncakes.
- 15
Roll it up.
- 16
Roll it up and seal the end.
- 17
Cut it in half. Take one half and twist it tightly like wringing a towel.
- 18
Tighten each one and place them on the baking tray.
- 19
Cover with plastic wrap and let it ferment until it doubles in size. (In summer, I fermented it for 20 minutes)
- 20
Brush with egg yolk.
- 21
Oven at 140 degrees for 40 minutes. The aroma fills the air.
- 22
Start eating the bread!
