Lei Gong Gen Pork Bone Soup First Launch

Lei Gong Gen Pork Bone Soup First Launch

A Cantonese-style slow-simmered pork bone soup with centella asiatica (pennywort) herbs, carrot and mushrooms, prized for its clear, mildly grassy broth and cooling wellness properties.

Instructions

  1. 1

Clean the thunder god root thoroughly. Wash it several times, because it grows lying on the ground and has more debris.

  2. 2
    Step image

Cut the carrots. This is optional; I personally think adding a bit of sweetness is good, and we have carrots at home, so I need to find a way to use them up.

  3. 3
    Step image

    Ginger is cut.

  4. 4
    Step image

After blanching the pork bones, put them into a soup pot along with carrots, shiitake mushrooms, and ginger. Add water, bring to a boil over high heat, then reduce to low heat to simmer slowly. The amount of water depends on the quantity of ingredients and the number of people eating at home, but in any case, it should cover the ingredients, and the water will decrease after simmering.

This is what it looks like after simmering for an hour and a half. It's a bit oily, but it will get much better after adding Lei Gong Gen.

  6. 6
    Step image

Add thunder god root and continue simmering over low heat.

  7. 7
    Step image

    Cut the yam while simmering.

  8. 8
    Step image

Simmer, simmer, about 20-30 minutes before turning off the heat, add the yam and red dates, add some salt until the soup is salty enough, then continue simmering on low heat. Simmer until the yam is cooked through. From the start of simmering to turning off the heat, I usually simmer for two and a half hours.

  9. 9
    Step image

It's cooked, first ladle out some soup to drink.
