Lemon Chicken Feet
Chicken feet are simmered with ginger and bay leaf, then shocked in icy water and soaked with lemon, chili and garlic until tangy, chewy and endlessly snackable.
Instructions
- 1

Trimmed the chicken feet nails, cleaned them, and put them in the pot with cold water.
- 2

Add slices of ginger, bay leaves, and cooking wine.
- 3

Skim off the white foam when it appears, then continue to cook for 15 minutes.
- 4

When cooking chicken feet, prepare garlic, red chili, and lemon by cutting them in advance.
- 5

After the chicken feet are cooked, wash them clean and then soak in cold water. I first put them in the refrigerator to chill the water, but you can also add some ice cubes. Soaking in cold water is the key to keeping the chicken feet crispy.
- 6

To make it more flavorful, cut the chicken feet and put them in a sealed jar.
- 7

Then add garlic, red chili, lemon, white sugar, light soy sauce, white vinegar, and salt, adjusting according to your own taste.
- 8

Finally, put it in the refrigerator to chill, and you can eat it the next day.
