Lemon Pickled Pepper Chicken Feet
Chicken feet are simmered with whole spices, then shocked in ice water for a bouncy bite. A long marinade of pickled peppers and lemon makes them brightly sour and spicy.
Instructions
- 1

Prepare the ingredients. The household green onions happen to be out of stock, so it is recommended to prepare them in advance. When buying chicken feet, ask the seller to trim the nails and chop them.
- 2

Place the chicken feet in cold water, add 1 medium spoon of Sichuan peppercorns, 1 piece each of star anise and cinnamon, a few slices of fresh ginger, 1 tablespoon of Weidamei premium cooking wine, and 1 stalk of green onion.
- 3

After the water boils, skim off the foam and continue to cook for 10 minutes.
- 4

After the chicken feet are cooked, rinse them clean and immediately soak them in ice water for more than half an hour. Finely chop the small chili peppers, green peppers, ginger, garlic, and pickled peppers together. Slice the lemon and remove the seeds.
- 5

Prepare the sauce: In a large bowl, add lemon slices, white sugar, minced ginger, garlic, and chili, and 2 tablespoons of Weidamei Premium Oyster Sauce.
- 6

2 tablespoons of Weidamei premium superior light soy sauce.
- 7

2 tablespoons of Yuexian lemon steamed fish soy sauce.
- 8

Add the water from the pickled peppers.
- 9

Stir the sauce evenly, add the chilled chicken feet, and mix well.
- 10

Refrigerate for about 2 hours and then enjoy the deliciousness.
