Lemon Soaked Chicken Feet
A popular chilled snack where chicken feet are blanched, rinsed, then soaked in a tangy bath of vinegar, soy, sugar, and fresh bird's eye chilies. Bright, chewy, and refreshingly sharp.
Instructions
- 1

Clean the chicken feet and cut them into pieces. Put them in a pot and blanch them in hot water, then wash them clean. Then put them back in the pot, add slices of ginger and yellow wine, and cook until done (usually about ten minutes).
- 2

Prepare the ingredients for marinating the chicken feet while boiling them: take a large bowl and add a little over half a bowl of cool boiled water (note: it must be cold, or ice water works too), a little aged vinegar, a little light soy sauce, a little salt, a little sugar, several small red chili peppers cut into sections, and one lemon cut into pieces.
- 3

Take the cooked chicken feet out and put them into the prepared cold soup. After soaking for two hours, they are ready to eat!
