Liangpi (Handmade Noodle Version)

Liangpi (Handmade Noodle Version)

Dough is kneaded in water to separate the starch from the gluten, producing smooth, slippery noodle sheets and chewy gluten that define this beloved street snack.

Instructions

  1. 1
    Step image

Knead the dough (slightly firmer), adding an appropriate amount of salt while kneading to increase its gluten. Let the dough rest for a while. Then add water and start kneading the dough repeatedly.

  2. 2
    Step image

    The first time.

  3. 3
    Step image

The water turns milky white. Pour the water into a large bowl, and remember to use a slotted spoon to strain it.

  4. 4
    Step image

This is the third wash, and the dough has gradually started to form gluten and clump together.

  5. 5
    Step image

The water is already very clear, so that's enough.

  6. 6
    Step image

Mix the gluten with yeast to let it proof.

  7. 7
    Step image

Let the washed starch water stand for about 4 hours.

  8. 8
    Step image

    A few hours later.

  9. 9
    Step image

Pour out the water, pour slowly, don't pour out the powder at the bottom, this amount is fine.

  10. 10
    Step image

Prepare cooking oil and liangpi Luoluo.

  11. 11
    Step image

Brush a thin layer of oil.

  12. 12
    Step image

Every time you scoop the batter, you need to stir it a few times, because the starch will settle at the bottom.

  13. 13
    Step image

Steam on high heat until large bubbles form, and try to use a lid with glass so you can observe what’s happening inside.

  14. 14
    Step image

After steaming, take it out and put it in a basin of cold water to chill for a while; this makes it easier to peel off. Brush a thin layer of oil on the cold skin to prevent it from sticking to each other when stacked.

  15. 15
    Step image

    Very successful.

  16. 16
    Step image

    That's enough.

  17. 17
    Step image

    Did so much together.

  18. 18
    Step image

The key to liangpi also depends on the cold dressing. In the bowl, put aromatic vinegar, light soy sauce, Sichuan peppercorns, bay leaves, star anise, and white sugar.

  19. 19
    Step image

Pour in boiling water, no need to add salt (add salt when mixing) and let it cool for later use.

  20. 20
    Step image

Steam the gluten in the pot for twenty minutes.

  21. 21
    Step image

Add the shredded cucumber, quick-cooked gluten, cilantro, scoop out the seasoning sauce, drizzle with sesame paste and chili oil, and it's ready.
