Light Egg Drop Soup
An ultra-light two-ingredient soup: beaten egg is drizzled into furiously boiling water and teased into soft ribbons with chopsticks, then studded with cucumber slices and a few drops of sesame oil.
Instructions
- 1
Eggs. These are eggs laid by domestically raised chickens, absolutely free of drugs and feed additives, but they are caged. Her eggs are not as red as the ones in the market that are claimed to be very yellow.
- 2
Beat the eggs until they are mixed and broken up.
- 3
Add plain water directly to the pot and bring it to a boil over high heat. When the water is boiling, pour in the beaten eggs while using chopsticks to stir them apart in the boiling water, or use a spoon to spread the egg liquid. Add cucumber. Turn off the heat. Add some sesame oil, chicken essence, cilantro, and salt.
