Lixia Tea Egg
Lixia tea eggs that tuck cilantro leaves against each shell under gauze, simmered with green tea and spices so leaf silhouettes pattern the speckled marble surface.
Instructions
- 1

Prepare all the materials, using green tea for the tea.
- 2

Wash the eggs and put them into a pot of cold water. Turn on medium heat to boil, and after it comes to a boil, cook for 7-8 minutes.
- 3

After boiling, cool the eggs in cold water and peel them. Cut the cheesecloth into small pieces, just big enough to wrap an egg. Place washed coriander leaves on the surface of the egg, wrap the egg with the cheesecloth, and tie it up.
- 4

Put all the wrapped eggs into the pot, and add tea leaves and spices.
- 5

Put a spoonful of premium soy sauce in the pot.
- 6

Add two spoons of braised soy sauce.
- 7

Add 5 grams of salt and enough water to cover the eggs, bring to a boil over high heat, then simmer over medium-low heat for 20 minutes.
- 8

After turning off the heat, do not take the eggs out; let them sit in the pot for more than 4 hours.
- 9

Remove the cloth from the braised eggs and plate them. The pretty and delicious Lixia tea eggs are truly lovable.
