Loach and Baby Bok Choy Soup
A clean, mildly sweet soup where whole loach simmered into a milky white broth pairs with tender baby bok choy, seasoned simply with salt for children.
Instructions
- 1

Rinse clean with clear water.
- 2

Put cold water in the pot and bring it to a boil.
- 3

Bring to a boil and remove for later use.
- 4

Heat the oil until it boils, add an appropriate amount of water, then pour in the scallions, ginger, and garlic.
- 5

Pour in the loach.
- 6

Cook the loach until the broth turns white, then add bok choy.
- 7

Boil the cabbage, and add an appropriate amount of salt for seasoning before taking it out of the pot. I made it for children, so I didn't add any other seasonings, but you can add them according to personal preference. Just adding salt also tastes pretty good.
