Loofah and Shrimp Soup
Peeled loofah chunks and fresh shrimp simmered in a light ginger-scented broth, a quick, clean summer soup prized for its delicate sweetness and soft texture.
Instructions
- 1
Clean the prawns thoroughly;
- 2
Peel the shell, use a toothpick to remove the shrimp vein from the tail to the third segment, and rinse clean;
- 3
Use a sharp knife to scrape off the loofah peel. Please note, you should scrape off only the outer hard green skin, not peel it; loofah prepared this way will have no wastage, retain its shape, and have a beautiful color.
- 4
Cut the loofah into diagonal chunks.
- 5
Pour a small amount of oil into the wok, sauté the minced ginger until fragrant, then add the loofah pieces to the wok and stir-fry.
- 6
Add a little salt and stir-fry until the loofah softens, then pour in an appropriate amount of water and bring to a boil. Add the shrimp to the pot and cook until their bodies curl and turn red, then remove from the pot.
- 7

Loofah and shrimp soup, light and refreshing, looks good, tastes good, and is nutritious!
