Lotus Leaf Exclusive
Plain yeast dough pressed into circles, brushed with oil, folded into half-moons and combed into lotus-leaf patterns, steamed to tender pockets for stuffing.
Instructions
- 1

An appropriate amount of flour.
- 2

A little sugar in the bowl.
- 3

Pour in an appropriate amount of warm water, and dissolve the yeast.
- 4

Pour while stirring, and stir until it becomes flaky.
- 5

Knead the dough to a medium softness and firmness.
- 6

Use the one-time fermentation method and knead the dough until smooth.
- 7

Press out a ring shape using a mold.
- 8

The mold presses it out especially round. This is also the reason I like using molds.
- 9

Take a round piece and roll it into an oval shape.
- 10

Flip it over and brush on a thin layer of oil.
- 11

Fold in half.
- 12

Use a new comb to press out the patterns. At each pattern, use the end of the comb to push inward.
- 13

Pinch the tail.
- 14

Place the prepared lotus leaf wraps in a warm place to ferment for an hour.
- 15

Place the well-fermented lotus leaf buns in a steamer with cold water, and steam over medium heat for 15 minutes.
- 16

Simmer for four minutes, then uncover.
- 17
