Lotus Root and Pork Skin Soup
A thrifty, collagen-rich soup of pork skin and fresh lotus root pressure-cooked together, producing a slightly sticky broth and crisp-tender lotus slices.
Instructions
- 1

Every time I buy meat, I save the pork skin and freeze it. When the pork skin is thawed, soak it in water and scrape it before use.
- 2

Peel the fresh lotus root; using a steel wool scrubber is the best. Just scrub hard and the peel will come off.
- 3

When cutting lotus root, you can handle it according to the size of the pieces you like. The lotus root purchased is very fresh, with thick and crisp flesh.
- 4

Put all the lotus roots into the pressure cooker, and do not exceed the warning line of the pot.
- 5

When making soup, add water all at once until the needed amount is reached. The pressure cooker cannot be opened halfway through cooking.
- 6

You can put the prepared pig skin directly into the pot. Don't add salt at first; add salt when it's done to keep the salt intake as low as possible. Turn the heat to high, and after the pot vents, place the safety valve, cook for about 10 minutes, then turn off the heat.
