Lotus Root, Corn, and Pork Rib Soup
Blanched ribs simmered low with lotus root, sweet corn, and carved carrot flowers, a clear golden broth tasting naturally sweet with tender starchy lotus root.
Instructions
- 1

Place the pot on the stove, add an appropriate amount of water, and bring it to a boil. Then add the ribs and cooking wine to blanch out the blood, remove them, and wash clean for later use.
- 2

Peel and wash the lotus root and corn, then cut into pieces; peel and wash the carrot, and press patterns on it using a cookie cutter.
- 3

Pour an appropriate amount of boiling water into the pot, add the pork rib segments, lotus root pieces, corn pieces, and cooking wine, bring to a boil over high heat, then reduce to low heat to simmer.
- 4

Simmer until tender, then add salt to season.
- 5

Add the carrot flowers and continue to simmer for another 10 minutes.
