Lotus Root, Pork Rib, and Corn Soup
A classic Cantonese home soup of pork ribs, lotus root, and corn, simmered slowly for a naturally sweet, clear broth after thorough blanching.
Instructions
- 1
Prepare the ingredients. After cleaning the ribs, soak them in clear water for about half an hour, changing the water 2-3 times in between, which can thoroughly remove the blood from the ribs.
- 2
Add an appropriate amount of water to the pot, put the cleaned ribs into the pot and blanch them. During the blanching process, add rice wine; if there is no rice wine, cooking wine can be used as a substitute.
- 3
Remove the blanched ribs and rinse off the surface scum with clean water;
- 4
Cut the peeled and cleaned lotus root into bite-sized chunks, cut the corn into small sections, and slice the ginger. It is recommended to rinse the lotus root immediately with clean water after cutting to prevent the surface from oxidizing and turning black, which would affect the color of the soup.
- 5
Turn on the gas stove, first pour about 2 liters of water into the pressure cooker, bring it to a boil over high heat, then add the ribs, lotus root, corn, and ginger;
- 6
Cover the pressure cooker with its lid, bring it to a boil over high heat, then reduce to low heat and simmer for about 12 minutes before turning off the heat;
- 7
After simmering until the pressure in the pressure cooker is automatically released, open the lid, add an appropriate amount of salt, then cover and continue to stew for about 5 minutes before turning off the heat. The amount of salt should be adjusted according to the amount of water in the pot and your personal taste.
- 8
After waiting for the second stewing to finish, open the lid once the pressure in the pressure cooker has automatically released. A pot of delicious soup is ready, and sprinkle a little washed and chopped green onion after serving.
