Lotus Root Slices with Ginger Juice
Blanched lotus root slices stay pearly white thanks to a vinegar bath, then get layered with plenty of fresh ginger, sugar and a touch of scallion oil.
Instructions
- 1

Peel the lotus root and cut it into thin slices, then rinse to remove the lotus root starch.
- 2

Finely chop the ginger (a bit more) and finely chop the red chili, then soak them briefly to prevent staining.
- 3

Add water to the pot, then add white vinegar and salt. Once the water comes to a boil, add the lotus root slices for blanching. (When blanching, there should be more water than vegetables)
- 4

Cool down and drain the water.
- 5

Place the lotus root slices in a bowl, add minced ginger, minced red chili, white vinegar, white sugar, salt, MSG, scallion oil, and sesame oil, and mix well.
