Lotus Seed and Pork Tripe Soup
Pork tripe is scrupulously scrubbed with oil, flour, wine, and salt, then stewed with lotus seeds, angelica, and goji into a milky, deeply nourishing tonic soup.
Instructions
- 1

First, rub the pig stomach with edible oil, then rub it with flour, next rub it clean with cooking wine and salt, then scald it with boiling water, and finally wash it clean and cut it into pieces.
- 2

Wash the lotus seeds and soak them in cold water for half an hour. (I bought ones without lotus cores; if you use lotus seeds with cores for soup, it will be bitter and affect the taste of the soup).
- 3

Wash the angelica and goji berries thoroughly, peel the ginger and slice it for later use.
- 4

Pour half a pot of water into the pot and bring it to a boil, add 15g of ginger slices, then add the pork stomach. Blanch for 3 minutes, remove it, and rinse clean for later use.
- 5

Put the cleaned pig stomach into the clay pot.
- 6

Pour in the soaked lotus seeds along with the soaking water, then add the remaining 15g of ginger slices and angelica.
- 7

Pour in cold water, not too much, the casserole should be about nine-tenths full. Boil the soup over high heat, then reduce to low heat and simmer for an hour.
- 8

After stewing, add an appropriate amount of salt and continue to stew for another 10 minutes.
- 9

Add an appropriate amount of chicken bouillon and mix well, then pour in the goji berries, cook for 30 seconds, and you can turn off the heat.
- 10

A delicious and healthy soup is ready. Have you learned it?
