Lotus Seed and White Fungus Soup
A classic Chinese sweet soup in which soaked white fungus, lotus seeds, red dates and longan are slowly simmered into a thick, glossy broth prized for its soothing, nourishing qualities.
Instructions
- 1

Prepare the white fungus, soak the white fungus in advance, and get the red dates and longan meat ready.
- 2

Prepare a small handful of goji berries and lotus seeds, and soak the lotus seeds in advance. My amount is about enough for 3-4 people.
- 3

First, put the lotus seeds, red dates, and longan meat into a pot and simmer over low heat for one and a half hours. I cooked them in a rice cooker because I thought it was more convenient—just plug it in! If you have time, you can also use a clay pot for slow cooking or an electric stew pot.

First, simmer all the ingredients except for goji berries and white fungus over low heat for one and a half hours, then add the white fungus and goji berries and continue to cook for another one and a half hours.
- 5

Cook until the white fungus becomes soft and glutinous, and the soup looks sticky, then you can turn off the heat!
