Low-key Charm — Blush Carrot
Crimson-fleshed radish, diced with patches of skin left on, rests with thick ginger shreds and salt until juices flow, then waits quietly in clean jars.
Instructions
- 1

Preliminary processing of carrots.
- 2

Wash, leaving part of the skin.
- 3

Cut the radish into cubes.
- 4

Julienne the ginger, cutting it relatively thick so that it can be easily picked out when eating.
- 5

Put the shredded ginger and diced radish in a bowl, and add an appropriate amount of salt.
- 6

Stir evenly and let it sit.
- 7

Wait until the radishes release water, then they can be bottled.
- 8

Take a clean, dry, oil-free bottle, use a large spoon to scoop out the radish (drain off the water) and put it into the bottle, layering a layer of radish with a layer of sugar.
- 9

Fill the bottle with white vinegar, and you can immediately add the radish.
- 10

Cover with a plastic bag.
- 11

Cover it and wait quietly for the food to be done.
- 12

One day is enough. The radish skins fade, and each radish cube looks as if it's been dyed with rouge. Take a bite, and it's crisp and tangy, with a sweet taste.
