Making Cold Noodles Exclusive
The traditional way to make liangpi: dough is repeatedly washed to separate silky starch water from elastic gluten, then rested and steamed into smooth, translucent, springy cold noodle sheets.
Instructions
- 1
Add an appropriate amount of water to the flour and knead into a smooth dough.
- 2
Add an appropriate amount of clean water to the basin and knead repeatedly.
- 3
Wait until the dough juice thickens, pour it into another bowl, and then add clean water. Continue until the water becomes clear, leaving only a small lump of gluten.
- 4
Let the washed batter sit for about 1 hour to settle.
- 5
After a few hours, slowly pour off the clear water on top.
- 6
Add a little salt (optional) to the remaining batter and mix well. Brush oil on the pan for making cold noodles, pour in an appropriate amount of batter, and spread it into a thin layer.
- 7
Put it into a pot of boiling water, cover, and cook for about 3 minutes.
- 8
Once bubbles appear on the surface, take it out and cool it in a basin of cold water.
- 9
Finished product. Then we just wait for us to improvise.
