Making financier at home

Making financier at home: low-gluten flour, almond flour and unsalted butter in a few quick steps, baked until golden and fragrant. Easy to follow with simple step-by-step instructions.

Instructions

  1. 1
    Step image

Butter is cooked until caramel-colored (cooked until slightly yellow with some sediment at the bottom).

  2. 2
    Step image

Add fine sugar and honey to the egg whites and stir until the sugar dissolves, and the egg whites completely lose their stickiness (whether it becomes fluffy depends on whether the egg whites are whipped properly).

  3. 3
    Step image

Add the sifted low-gluten flour and almond flour and mix evenly.

  4. 4
    Step image

Then add the butter that has been cooked until it has a caramel color and mix evenly.

  5. 5
    Step image

Put it into a piping bag, and preheat the oven to 200 degrees.

  6. 6
    Step image

Brush the mold with a layer of butter, and evenly pour in the cake batter.

  7. 7
    Step image

Use the high Beike 80S wind furnace mode, and bake at 170 degrees for 12-14 minutes.

For the finished product, I used existing cookie molds, but you can buy Financier mini gold bar molds, which are more French.
