Mango Sticky Rice

Classic Thai dessert of coconut-infused sticky rice soaked for hours, simmered in sweetened salted coconut milk, molded, and served with fresh mango and a drizzle of coconut cream.

Instructions

  1. 1

Soak glutinous rice for 2-4 hours in advance. (Be sure to soak it beforehand! Otherwise, the rice core won't cook through.)

  2. 2

Add 15g of sugar and 1g of salt to the ml of coconut milk, heat over low heat, and gently stir until fully dissolved.

  3. 3

Reserve 30ml of coconut milk to pour on top at the end, and cook the rice together with the remaining 170ml of coconut milk and glutinous rice. (Use the rice cooker on the cook setting)

  4. 4

After the glutinous rice is cooked, stir it with a rice paddle, pack it into a bowl, and then turn it upside down onto a plate.

  5. 5

Cut the mango and arrange it on a plate, garnish with mint leaves, and drizzle with coconut milk. It's done~~~
