Mashed Potato Cake
Mashed sweet potato cakes enriched with milk and glutinous rice flour, dipped in sesame-studded batter and fried for a crisp shell around a sweet, tender center.
Instructions
- 1

Peel the sweet potatoes, wash them clean, and cut them into slices. Steam them in a pot of boiling water until cooked.
- 2

Mix low-gluten flour, corn starch, potato starch, eggs, a little salt, and an appropriate amount of water into a thin batter.
- 3

Prepare an appropriate amount of white sesame seeds.
- 4

Steam the sweet potatoes until cooked, then remove and mash them into a puree.
- 5

Add more sugar, a little salt, a bit of milk, and mix the glutinous rice flour evenly into a thick paste. You can also add a little more glutinous rice flour to shape it so it can be formed into balls, depending on personal preference. I personally prefer not to add too much flour and eat more sweet potatoes. So it is just a thick paste.
- 6

Scoop a big spoonful of mashed potatoes, sandwich it between two cookies 🍪, and tidy up the edges (though you can also be very casual 😂 since you're eating it yourself).
- 7

Then coat the edges of the whole pancake with a layer of white sesame seeds, and then dip the entire pancake into the prepared batter to coat it all over.
- 8

Pour an appropriate amount of cooking oil into the pan, and when the oil is about 70% hot, gradually place the pancake batter coated with batter into the oil.
- 9

Fry over medium to low heat until both sides are golden, then remove from the pan.
- 10

So crispy.

It's so delicious, everyone can give it a try 😊
