Mashed Potato Salad
A creamy mashed potato salad loaded with egg, corn, ham and salt-cured cucumber and carrot, whipped with butter and black pepper for a rich yet bright picnic favorite.
Instructions
- 1
Steam for 30 minutes, it's ready once a chopstick can go through it.
- 2
Cut the butter into small pieces, add some sugar, and put them in a bowl.
- 3
Boil the egg and chop it.
- 4
Cook the corn and remove the kernels, and cut the ham sausage into small cubes.
- 5
Slice the carrots and cucumbers thinly, marinate them with salt for half an hour, and then squeeze out the water. This makes them crisper, and adding them to mashed potatoes prevents it from being greasy.
- 6
Steam the potatoes until cooked, peel them, and add a little bit of salt.
- 7
Mash into a paste, add black pepper and milk multiple times, stirring as you add, until the taste is just right.
- 8
Then add the chopped eggs, ham sausage, cucumber, carrot, and mayonnaise.
- 9
Stir evenly.
- 10
Just sprinkle on the chopped crab sticks, and it's ready.
- 11
It tastes better when refrigerated.
