Matcha and sweet red bean two-color toast, with bright colors, warm for the heart and the stomach.
Matcha and sweet red bean two-color toast — high-gluten flour, milk powder and salt, baked until golden and fragrant. Simple ingredients, satisfying homemade flavor.
Instructions
- 1

Put 250 grams of high-gluten flour, 100 grams of milk, 60 grams of cream, 4 grams of yeast, 30 grams of egg white, 45 grams of white sugar, 20 grams of milk powder, and 3 grams of salt together and mix them in a food processor.
- 2

Mix evenly, stir for 10 minutes, and after a coarse film forms, add 25 grams of unsalted butter softened to room temperature.
- 3

Continue stirring for 15-20 minutes until a thin film forms.
- 4

Take out the dough and divide it into 2 portions. After shaping one portion into a round, wrap it with plastic wrap and let it ferment at room temperature until it doubles in size (the room temperature is best around 25°C).
- 5

Add 6 grams of matcha powder to another dough and continue mixing (Note: it's best to cover it, as the matcha powder may scatter while mixing)
- 6

Stir until the color is uniform.
- 7

Similarly, shape into a round bun, wrap with plastic wrap, and ferment until it doubles in size.
- 8

Take out the fermented dough and roll each into a rectangular thin sheet.
- 9

Then stack the matcha noodles on top of the original flavor noodles.
- 10

Sprinkle an appropriate amount of sweet red beans, and slowly roll it up from one end. Remember to roll it tightly to prevent layering and hollows.
- 11

Place it in the oven for the second fermentation at a temperature of 35°C and humidity of 75%, with a bowl of hot water to help fermentation. When it is about 80% full, brush a layer of milk mixture and put it in the oven.
- 12

Preheat the oven to 170℃ and bake for about 30-35 minutes. (After the surface is browned, cover with a piece of aluminum foil to prevent the surface from burning)
- 13

After baking, let it cool and slice it. Good matcha is bright green at first, but after long exposure to air and light, it will gradually oxidize and darken.
- 14

Matcha two-color toast, done O(∩_∩)O
- 15

The colors are bright and beautiful, and matcha goes super well with sweet red beans.
- 16

The weather is getting cooler, so enjoy a piece of matcha red bean toast that's both warming for the heart and the stomach.
