Matcha Glutinous Rice Balls
Matcha-enriched glutinous dough is boiled, kneaded until silky, and wrapped around a crunchy filling of sugared cashews and sesame for chewy, bittersweet mochi balls.
Instructions
- 1
Add 3 tablespoons of matcha powder to the glutinous rice flour and mix well. Prepare the melted butter, and use milk, zero-calorie sugar, and butter to combine the flour into a dough.
- 2
Cashews and white sesame seeds are blended with an appropriate amount of sugar using a blender until crushed.
- 3
Boil water and cook the noodles in the pot until done.
- 4
Scoop out and drain the water, then press down firmly with a rolling pin.
- 5
Slightly cool down, put on PVC gloves, and knead the dough until it becomes a very elastic dough.
- 6
Divide into small portions, put in the filling, and wrap it like making buns.
- 7
The dough with good elasticity won't break no matter how you pull it, and it remains soft and sticky even the next day.
- 8
I rolled it in roasted glutinous rice flour, so it would be easier to pack.
- 9
This way, they can be put together without needing separate packaging.
