Matcha Red Bean Bread Roll

Instructions
- 1

After kneading the intermediate dough, place it in the refrigerator to ferment overnight.
- 2

Preparation of the main dough ingredients.
- 3

Cut the intermediate dough into pieces and put it into the stand mixer with bread flour, sugar, matcha powder, water, and milk powder, then knead the dough.
- 4

When the flour forms a dough, add salt and continue kneading.
- 5

When the dough is smooth and delicate, add olive oil and continue kneading.
- 6

When the dough is smooth and can stretch into a firm thin film, shape the dough, place it in a bowl, and let it ferment at room temperature until it doubles in size.
- 7

Degas the dough, divide it into small pieces of 40 grams each, shape them into balls, and let them rest for a few minutes.
- 8

Take a small piece of dough and roll it into a long rectangle.
- 9

After flipping it over, spread the red bean paste and roll it up.
- 10

Cut the dough in half, then cut the dough in half again, making a total of 4 portions.
- 11

Place it into a rectangular mold.
- 12

Ferment until it is 1.5 times its original size. Preheat the oven to 180 degrees with both top and bottom heat. Place the mold in the oven and bake for 15 minutes until the surface is evenly colored, then take it out to cool.
